Every chair has someone&#8217;s name, every portion has been counted. Then, just as the first guests begin to arrive, there&#8217;s another knock at the door. They weren&#8217;t invited. What happens next?<\/p>\n<p>Do you apologise and explain there isn&#8217;t enough food? Do you count the chairs and realise there isn&#8217;t room? Or does someone disappear into the kitchen, add another cup of rice to the pot and pull more chairs up to the table?<\/p>\n<p>The answer reveals more than how we host. It reveals how we think about people.<\/p>\n<p>There are some things you cannot learn from a recipe. You cannot measure generosity in teaspoons. You cannot write belonging to a method. You cannot set it with a kitchen timer.<\/p>\n<p>The recipes tell you what goes into the pot but they rarely tell you who should gather around it.<\/p>\n<blockquote>\n<p>African hospitality begins with a decision to believe there will always be enough for one more.<\/p>\n<\/blockquote>\n<p>Jane often says that when she thinks of her late mother, generosity is the first thing that comes to mind. She likes to believe her mother left her more than memories. She left a way of living.<\/p>\n<p>Spend an afternoon with Jane and you&#8217;ll understand. She&#8217;ll feed you first before she asks why you&#8217;ve come. The question isn&#8217;t, &#8220;What brings you here?&#8221; The question is, &#8220;Have you eaten?&#8221; Only afterwards does the conversation begin. Some of us grew up around tables like these, others are trying to remember how to build them.<\/p>\n<p>Many of us have started confusing hospitality with entertainment. We worry about matching plates, elaborate menus, spotless homes, whether we&#8217;ve chosen the right wine, or whether everything looks perfect before anyone rings the bell. We spend so much time preparing our houses that we sometimes forget to prepare our hearts. African hospitality asks only that we make room.<\/p>\n<p>One afternoon, while photographing recipes for TAMU in the small town of Greyton, Livhuwani went for a walk. As she wandered through the streets, she met a woman named Faith. It was one of those conversations that begins with a smile and somehow lingers. Before they parted, Faith said something unexpected: &#8220;Come to my house for dinner in a few days.&#8221; Livhuwani smiled politely, then came home and told Jane. Neither of them quite believed it. Someone you&#8217;d only just met inviting you into their home felt almost too generous.<\/p>\n<p>Then Faith called, and called again: &#8220;Don&#8217;t forget dinner.&#8221; In our excitement, we completely forgot to mention that neither of us had eaten red meat for years.<\/p>\n<p>Faith lived in a one-room home. Her bed stood only a few steps from her stove. A small fridge tucked neatly into the corner. Everything she owned fitted inside a single room.<\/p>\n<blockquote>\n<p>When we walked through the door, the space felt impossibly spacious because of the size of the welcome waiting inside it.<\/p>\n<\/blockquote>\n<p>The table was covered with food she had prepared: rice, salads, sides and beef. We knew immediately that this meal had cost her something. It had cost her money, time and effort but she gave it gladly.<\/p>\n<p>We both ate beef that evening not because our values had changed but because refusing it somehow felt impossible. We were overwhelmed by the cost of her generosity. Here was a woman who had so little. Yet she had chosen to give strangers the very best she had because to her, people were worth making room for even when she had little.<\/p>\n<p>Faith changed the way we looked at African tables. The large platters that sit at the centre of so many meals had always looked to us like simple tradition. Now we saw something else. Look again; they are an act of anticipation. A table laid with the hope that someone else might arrive: the uncle who arrives after church, the cousin who brings a friend, the neighbour who decides to stop by, the aunt you haven&#8217;t seen in months, or the church friend who has been unusually quiet lately.<\/p>\n<blockquote>\n<p>The food stretches because the welcome stretches first.<\/p>\n<\/blockquote>\n<p>Then there was Gogo Moyo, the widow who welcomed Jane&#8217;s entire family when they first arrived in South Africa. We saw neighbours who never arrived empty handed, bowls of water placed before a meal, children learning to greet every visitor before they learn to greet themselves, and pots that always seemed to stretch one serving further.<\/p>\n<p>Life looks different now. Few people arrive unannounced. We send messages first, check calendars, and ask whether next Tuesday works.<\/p>\n<blockquote>\n<p>Technology has changed the way we gather, but it doesn&#8217;t have to change why we gather.<\/p>\n<\/blockquote>\n<p>Hospitality has never depended on surprise; it has always depended on someone choosing to open their life to another person. Livhuwani planted pumpkin leaves in her garden this year, and before harvesting any for her own kitchen, she invited her neighbour to pick some first.<\/p>\n<p>We live in an age where loneliness is increasingly common and individualism is often celebrated. We protect our time, guard our diaries and retreat behind closed doors. African hospitality offers another way, one that reminds us a meal was never only about food. It was always about people.<\/p>\n<p>Recipes preserve flavour, stories preserve memory, and hospitality preserves something even more fragile: our ability to make another human being feel they belong. No one was meant to eat alone.<\/p>\n<p>Before you turn the page, we&#8217;d like to leave you with one invitation. Make this rooibos sorbet for someone else. Invite the neighbour you&#8217;ve been meaning to get to know. Call the aunt you haven&#8217;t seen in far too long. Reach out to the friend who hasn&#8217;t quite seemed themselves lately. Then set one more place because the most important part of the recipe was never written down. Stir until the sugar has completely dissolved.<\/li>\n<li>Once dissolved, reduce the heat and let it simmer for an additional 5 minutes.<\/li>\n<li>Remove from heat and discard the rooibos leaves or tea bags. Allow the syrup to cool to room temperature.<\/li>\n<\/ol>\n<p><strong>Prepare the sorbet mixture:<\/strong><\/p>\n<ol>\n<li>In a blender, combine the cubed sweet melon, fresh mint leaves, and lemon juice. Blend until smooth.<\/li>\n<li>Once the rooibos syrup has cooled, combine it with the melon mixture in the blender. Blend again until fully combined.<\/li>\n<li>Transfer the mixture to a container and refrigerate for at least 4 hours, or until chilled.<\/li>\n<\/ol>\n<p><strong>Churn the sorbet:<\/strong><\/p>\n<p>If using an ice cream maker:<\/p>\n<ol>\n<li>Follow the manufacturer\u2019s instructions for your ice cream maker.<\/li>\n<li>Pour the chilled mixture into the machine and churn for about 20 minutes.<\/li>\n<li>Transfer to a bowl and freeze until firm.<\/li>\n<li>Enjoy your refreshing rooibos sorbet!<\/li>\n<\/ol>\n<p>If not using an ice cream maker:<\/p>\n<ol>\n<li>Pour the chilled mixture into a shallow dish lined with parchment paper that can fit in your freezer.<\/li>\n<li>Freeze until completely frozen (about 4-6 hours).<\/li>\n<li>Once frozen, break the sorbet into pieces and place them in a food processor. Blend until smooth and creamy.<\/li>\n<li>Serve immediately for a soft sorbet or transfer back to the freezer for later use.
