A modern-fine dining eatery located at The Houghton Hotel, Johannesburg with sweeping views of nature and The Houghton Golf Course. The menu is inspired by global flavours and the chef’s culinary exploits.
This stylish restaurant that overlooks the Houghton Hotel’s golf course is a drawcard for the discerning diner who appreciates authentic, heartfelt flavour. Sejour, meaning ‘sojourn’ in French, is where you will enjoy punchy flavours served little or large, petiscar, meaning ‘shared style of dining’.
Chef Freddie Dias has allowed the menu to evolve and make the concept more diverse. There’re unique tapas choices for the sophisticated Joburg palate to appreciate, in addition to main courses should they wish to enjoy a more traditional three-course menu, with or without lots of little sides. It’s engaging and interesting, expressive and balanced.
Freddie shares the inspiration of his Portuguese roots, leaning harder on his unique, unconventional style. “Former sous chef, now head chef, talented Brandon, look at food in a similar way to me, and enjoy the same style. The new menu is a collaboration between us,” says Freddie. “The three ways of duck dish is a good example. We’ve elevated the duck confit, serving it with parsnip puree, a chorizo and black bean ragout and a sliver of seared duck breast glazed with pomegranate and honey, plus duck ham.”
The coffee-glazed pork belly was inspired by a family braai at home. “It’s served with three purees – apple and fennel, white bean, and an orange and roasted red pepper puree, with a simple, shaved fennel salad.” The coffee glaze is reminiscent of a Mexican mole with hints of ancho chilli, cinnamon and coffee.
