In the iconic Old Biscuit Mill in Woodstock, you’ll be welcomed by a sea of smiling faces. Behind the scenes, an ensemble of passionate chefs, led by the meticulous eye of head chef Nathan Clarke, orchestrate a symphony of gastronomic brilliance. The former fine-dining luxury of The Test Kitchen has been softened, with cutlery housed in pewter tankards on tables still covered in white linen. Humbling service elevates the dining experience. Passion and purpose resonate throughout, with each team member exuding enthusiasm and dedication. Here, the kitchen isn’t just a place of heat and pressure; it’s a vibrant stage where every beat is felt, creating an edible future.

Clarke’s journey from kitchen sculler to cooking maestro embodies the essence of this mentorship programme. Aspiring students learn under the tutelage of culinary luminary Luke Dale Roberts and his seasoned management team, being mentored and compensated for their dedication to mastering the craft.

From Cape Malay to Asian delights on two enticing menu options: indulge in the casual offerings of the à la carte 2 or 3 course menu featuring Wagyu burgers and comforting classics, or opt for the curated ‘Fully Fledged’ set menu. From the tantalising Korean-fried chicken with ponzu emulsion to the exquisite lobster bao accompanied by the city’s finest chips, every plate tells a story of craftsmanship and global inspiration. Savour the vivacious flavours of prawn dumplings immersed in fragrant broth, or the artistry of duck ravioli presented with understated elegance.

    The staff was so helpful and went above and beyond to make the night special for us. I'd been to the original TTK Fledglings location previously but this new space in Woodstock just makes perfect sense. The decor is cozy yet edgy, and the lighting is intimate and creates a welcoming mood. The drinks were 10/10 and the food was just out of this world. My girlfriend is a vegetarian and she is still talking about their vegetarian options a day later. I had the KFC as a starter, and it is by far the best Korean chicken I've ever had, then I had the pap & vleis as a main which really had me stretching out afterwards. Felt like it was made by my Mom on a Sunday after church. Thank you TTK Fledglings!

    Ich war innerhalb meines Kapstadt Aufenthalts zum zweiten Mal dort und kann es nur wärmstens empfehlen. So ein freundlicher und zuvorkommender Service, so eine tolle Präsentation der Speisen. Das Essen war vom ersten bis zum letzten Gang ein Geschmackserlebnis. Wir saßen an der Theke und konnten den Köchen beim herstellen unserer Gerichte zusehen. Toll- völlig unaufgeregtes und entspanntes Personal. Komme auf jeden Fall wieder

    Second visit to enjoy the restaurant week menu. And second amazing experience…. The lamb kebab is sublime so highly recommended.

    What a night … what a meal … what an experience … from the big smile that welcomed us to the fabulous friendly fun service of the floor service team, the bubbles, the wine … oh .. and …. THE FOOD glorious Food!!! Chef Nathan your quiet calm demeanour, gentle guidance of your kitchen team and attention to detail is to be applauded. The Fledglings they will fly and fly with style they will when they do.
