encapsulates the traditions of the farm through pared-back architecture
and honest food. The dedication to provenance equates to supporting
local from the best community producers and surrounding farms –
and using seasonal produce grown on site.
Head chef Julia du Toit delights from the first bite, reflecting her years
of working under executive chef Peter Tempelhoff – from roasted
sweet potato epí with rosemary butter to the last mouthful of matcha,
lime and pistachio. It’s unadulterated fare from premium ingredients
that will delight any diner – dishes like the spring pea mousse with
smoked and pickled carrots, Belnori goat’s cheese, soft herb and
truffle dressing are thought-provoking and memorable.
The harmony of each dish is impressive, with each component playing
a worthy part – like in the king trout with golden beets, remoulade,
orange and a fennel vinaigrette. Ostrich carpaccio cooked over coals
with roast onion ponzu, miso mayo and shiitake will stop international
gourmets in their tracks. “We stay true to our heritage – it’s local, with
influences from everywhere. You don’t want to do too much to the
ingredient,” says Julia.
