Situated in Keyes Art Mile, the growing art and food hub of Rosebank, Marble Restaurant boasts a grand wood-fired grill imported from Grill Works in Michigan as the focal point of the restaurant. The concept combines the open-fire trend, seen internationally, with an added pinch of true South African flair.
We have long been fascinated by what makes South African cuisine unique, and we believe its down to being meat and flame enthusiasts. It is the timeworn ritual of cooking on wood fires and gathering with friends, the shared experience in the preparation. However, it is not just meat which we celebrate in this way, we boast an array of fresh ingredients all cooked on our perfectly prepared coals including fish, poultry, vegetables and breads.
Marble was an overnight Johannesburg success story when it opened with great fanfare seven years ago. Diners fell in love with the beautiful, modern space and the food cooked over fire. A minor facelift last year included new flooring (check out the exquisite pale blue marble with golden flecks in the bathrooms) and the striking new Arabesco marble bar counter.
Chef David Higgs – now a celebrity chef thanks to his foray onto the small screen – says that from the beginning Marble was deliberate in its vision to serve elevated but accessible food in a beautiful, luxurious space with good service. “We operate at the highest level possible so that we can be consistent in a large format restaurant. Being inconsistent is a restaurant’s biggest enemy,” he says.
Starters include grilled octopus on spicy tamarind curry; snails with a tomato and garlic stew and loads of gooey mozzarella which reminds the diner of a pizza, and a fabulous Caesar salad. The grilled pork belly with its miso and honey glaze comes with a tart apple, celery and sultana slaw to cut through the richness. There’s a small dessert menu, cheese board plus a fancy jaffle filled with melting Emmental and a red onion and tomato chutney.
There’s an impressive selection of local and imported wines with a sommelier on hand to make recommendations by the glass or bottle. Cocktails and flame-inspired tapas are available in the bar area with its magnificent views of the City of Gold.
