While Overture will be closing its doors at Hidden Valley Wines on 30 September, Bertus Basson and his team will be opening Chorus, their new restaurant at Waterkloof Wine Estate, on 18 October 2022.
As for the menu at Chorus, Bertus will be serving a seasonal four and six-course menu, including their signature soufflé. Not only will the wine list celebrate Waterkloof’s wines, but also fine wines from some of South Africa’s other top producers.
Waterkloof is synonymous with gastronomy. The expansive views that end in the ocean from the glass promontory, are astounding. This double-volume space has introduced more soul than before, with framed family photographs to stylish leather on tables – all discreet clues to the fact that it’s celebrity chef Bertus Basson’s restaurant.
Humble and authentic despite being a household name, Bertus celebrates provenance in all his establishments, and Afrikaner roots. Traditional fare is elevated to fine-dining style, starting with the moreish breads. Starters are light yet enduring, perhaps a raw tuna with grape, chilli, coriander and cashew or a homemade cumin labneh with pressed cucumber, spring veg, green juice and curry pickle. The ricotta and free-range egg yolk ravioli is impressive delicate, enhanced with spinach, almond and a topping of Parmesan and lemon Hope that when you dine there the pork belly with langoustine, sweetcorn, turnip and Thai flavours is on the menu. It constantly evolves to match the micro-seasons, with dishes showcasing the biodynamic Waterkloof wines.
Classic desserts like the soufflé, is what you will return for, and to enjoy the hum of happy voices and invigorating laughter which gently reaches a crescendo, adding life and warmth to what could have been an austere space. Here is food with soul, simplicity perfected.
