Service was a little slow (they were very busy) and it was noisy. Steaks were excellent

First time visitor, after checking some reviews online. Started off well, bean curd nigiri was excellent and calamari starter not bad. Decent coffee too... unfortunately I have no idea how something billed as a "steak speciality" restaurant could let meat like what we received out of the kitchen. Rib-eye medium rare and sirloin medium ordered... it was almost as if it was the first day this griller had ever cooked steaks. As if they think the more rare the steak is ordered, the lower the temp grill it needs to be cooked on. In between the black grill marks the meat was grey, and cold raw meat inside. My wife's steak was similar, couldn't even melt the compound butter that was served on her steak. I just dont understand how a high end restaurant can let these things leave the kitchen? Anyway, I understand mistakes can be made but the perceived attitude of the staff really sealed the deal for me. I say perceived because they never said or did anything untoward outright, but I got the feeling they were not interested at all in what kind of dining experience their customer was having. Any client who answers yes when asked if you are done with the meal, with 80% of the steak untouched should at least raise a question mark? In my opinion one look at the steak would tell you immediately it was very wrong... and then the bill and payment are brought and taken extremely quietly with zero engagement. Red flags to someone who spent many years working as a waiter a long time ago. I tested my theory out on the manager as I left. I asked him if the griller working was new or inexperienced, to which he responded yes. I then said I dont think he really knows what he is doing, and instead of asking what was wrong or why I thought so, he immediately ran to kitchen "to check up on him". Suspicions confirmed. My wife hates confrontation so for her benefit I didnt complain at the time, even though I hate paying top dollar for terrible food, so some blame does lie with me... unfortunate.

My steak was a bit tough and gristly. Been to this restaurant more than 10 times and first time steak wasn’t perfect so no big deal
